Biscuits are the fastest thing in this ledger: 90 minutes from cold jar to hot tray, and the only leavening is 105 g of three-day-old discard plus the steam from cold butter. The trick is that discard is acidic, and acid plus baking soda in the right ratio gives a lift that yeast cannot match in that window.

The ratio that matters

For every 120 g of flour, 3 g of baking soda. More and the biscuits taste of soap; less and they do not rise. Buttermilk adds its own acid, so the total is 3 g soda to 180 g buttermilk plus 105 g discard. Mix the soda into the dry flour first so it disperses evenly.

Lamination with cold butter, not cutting

Instead of cutting butter into flour with a pastry blender, I fold the dough three times over slabs of cold butter, five minutes apart. The butter stays in distinct sheets, and when those sheets hit a 215 °C oven the water in them flashes to steam and pushes the layers apart. A pastry blender gives you coated flour particles and, at best, a crumbly biscuit.

Cutting and baking

Pat the dough to 2.5 cm and cut 5 cm rounds with a floured cutter, straight down, no twisting. A twisted cutter seals the edges and the biscuit rises lopsided. Bake at 215 °C for 16 minutes on the middle rack; the tops should be golden and the sides should show visible horizontal splits.

  • Do not re-roll scraps more than once; the second pass is noticeably tougher.
  • Brush the tops with buttermilk, not egg, so the crust stays soft.
  • Best eaten within 20 minutes, but they revive at 150 °C for 5 minutes the next day.

The discard must be at least two days old and smell cleanly sour. Discard that has been fed the same morning has no acidity left, and the soda will have nothing to react with.
