Spelt does not fail because it is weak. It fails because people give it the schedule of a wheat loaf. Spelt gluten is more extensible and less elastic, and its own enzymes break that gluten down faster than wheat's do. At 50% white spelt the dough will still open beautifully — provided the whole timeline is compressed and the handling is gentle.
The timeline has to shrink, all of it
A 78% wheat loaf bulks for 4.5 hours. This one bulks for 3 hours at 26 °C, with only three folds, and the starter is used at hour six rather than nine. The cold retard drops from 14 hours to 8. Every number moves in the same direction, which is why adjusting one of them alone does not fix a collapsing spelt dough.

Handling: no slapping, no bench flour, no lifting
Letter folds in the bowl, three times, 30 minutes apart. When the dough comes out, it comes out onto a lightly floured bench and is moved with a bench scraper — never lifted with two hands, because a lifted spelt dough stretches under its own weight and the gluten strands tear at the shoulder. The batard is short and wide rather than long and thin.
Scoring and a cooler bake
One shallow slash along the length at 15 degrees, 4 mm deep. Spelt crust colours faster than wheat because of its higher sugar content, so the bake drops to 230 °C with 18 minutes of steam and 38 minutes total. If you bake at 245 °C you get a dark, bitter shell and an underdone centre.
- Crumb is pale and custardy with thin cell walls.
- Flavour is sweeter and slightly grassy; it needs less salt than wheat, 1.9% is plenty.
- Best eaten the day it is baked; the crust softens by day two.
Spelt dough that has gone slack in the tub cannot be rescued by shaping it tighter. If it spreads within 20 minutes of shaping, the bulk went 30 minutes too long at that temperature.
